What is matcha ?

Matcha (抹茶) is a special type of powdered green tea from Japan, made from young tea leaves (tencha) that are shaded before harvest, then steamed, dried, and finely ground with stone mills.

Key characteristics:

  • Consuming the whole leaf: Unlike regular steeped teas, with matcha you drink the entire powdered leaf. This means you absorb all the nutrients, antioxidants, and caffeine contained in the tea leaves.

  • Vivid green color: Because the leaves are shaded, their chlorophyll content increases, resulting in a bright green color and a distinctive sweet umami flavor.

  • Versatile applications: Beyond Japanese tea ceremony, matcha is widely used in culinary creations, beverages, desserts, and even cosmetics.

Where does matcha come from?

Matcha originated in ancient China, but it was refined and developed into a sophisticated ritual in Japan, especially within the Japanese tea ceremony (茶道 – chadō). The most famous matcha-producing regions are Uji (Kyoto), Nishio (Aichi), Yame (Fukuoka), and Shizuoka.
